Question: Are green potatoes and potato sprouts safe to eat?

Mahoning Valley Farmer Answer:
The Ohio State University County Extension has a detailed answer to potato safety, and our thanks to Beth Stefura of the Mahoning County office for sending us an information sheet on it.

In short, Beth advises that sprouts should be removed before eating potatoes. For green potatoes, Beth explains: “The green areas on tubers develop where the potato was exposed to the sun. This condition occurs when the potatoes were not planted deeply enough or not covered with straw. The green portions taste bitter. These green areas should be cut off and discarded. Exposure of potato tubers to fluorescent light or sunlight causes greening during storage.” Because a consumer can't usually tell what has caused a green spot on a potato, it is best to cut off those areas to avoid possible unpleasant reactions in some people.

As with all fresh foods, proper storage and handling are necessary for safe meals.

Ohio is one of the largest producers of potatoes and potato chips in the U.S. and we can sometimes take it for granted!
